I’m not usually the snacking type, but there’s something about the holidays that puts me in the cooking and baking mood, which usually results in me snacking.
One of the best things about the fall and winter is persimmons. If you’ve never had one, get one ASAP. They look like orange tomatoes with a bit of a thicker skin, but they taste like the best dessert you could ever have. Sweet with natural hints of cinnamon.
Fall/winter is the only time that you can buy persimmons in the U.S. I’ve always eaten them plain, but to make them more a treat I decide to dip them in chocolate.
So here is my Vegan Chocolate Dipped Persimmon recipe.
Ingredients
1 cup vegan chocolate chunks
3 persimmons
Directions
Wash the persimmons and remove the leaves. Cut them into wedges, and if your persimmons have seeds, remove the seeds.
Set your stove to low heat, add the vegan chocolate chunks, and stir until fully melted. Once melted, remove from the heat and begin dipping the persimmons. I covered about a third or half of the persimmon in chocolate.
Place them on a try and set in fridge for at least 10 minutes. Make sure the chocolate hardens. If you’re not eating them all right away, they should be fine if stored in a Tupperware and in the fridge.
